Codfish is our signature dish because here at the trattoria &#8220;Agli Amici&#8221; it is the dish that has always been made. As far back as the 1930s, the first De Rosa management had a small grocery store with a banquet for the pouring of wine and liquor, and on Fridays, the day of the lean season, a small table was placed where they sold stockfish already soaked, by the slice; during Lent and especially on Ash Wednesday, they also saw herring, &#8220;poor&#8221; fish that arrived in barrels preserved in salt.
